Depth of field is the range of distance in a scene that appears acceptably sharp. "Acceptably sharp" is defined by the circle of confusion — the maximum size a point of light can be on the sensor before it looks blurry.
Hyperfocal distance is the closest focus distance at which infinity is still acceptably sharp. Focusing at the hyperfocal distance gives you the maximum possible depth of field for any given aperture and focal length.
Shallow DOF is achieved with: wide aperture (low f-number) + long focal length + close subject distance. Deep DOF: small aperture (high f-number) + short focal length + distant subject.
